DARK CHOCOLATE MOUSSE WITH A PINCH OF FLEUR DE SEL

Light smooth texture !  Dark chocolate balanced with A  PINCH OF SALT Fleur de Sel will  give a wonderful taste.

PREP TIME: 10 MINUTES

COOK TIME: 5 MINUTES

RESTING: 24 HOURS

INGREDIENTS

8 eggs, 200 gr dark chocolate 52%, 100 gr butter, 40 gr icing sugar, 1 pinch of “fleur de sel”

INSTRUCTIONS

Cut chocolate in small chunks, add butter and gently melt using a double boiler.

Separate egg yolks and egg whites

Whisk the egg yolks with 20 gr sugar

Whisk egg whites until foamy, add 20 gr sugar and whisk

Pour melted chocolate into egg yolk and combine.

Gently incorporate the whisk egg whites into the preparation

Cover and refrigerate for 24 hours before serving.

Add a pinch of “fleur de selas a topping just before serving.
